An easy birthday cake at home
How to make a beautiful dark chocolate cake without egg and cocoa, at home for birthdays or any special occasions. If you have prepared ingredients at home, it is easy to make a cake at any time. Ingredients to stock caramelized sugar, grind sugar to powder, baking powder, vanilla essence, oil, milk, flour, and coffee powder
All purpose flour/maida - 2 cup/400 gm
Milk - 1 cup
Sugar powder - 1 cup
coffee powder/instant/Nescafe - 2 teaspoon
Oil - ½ cup
Salt - pinch
Baking powder - 2 teaspoon
Vanilla - 1 teaspoon
Cashew nut - 25 gm
Raisin - 25 gm
Cherry - 25 gm
Sugar to caramelize - 1/4 cup
How to caramelize sugar
Heat a pan add sugar and heat well and melt. Wait for sugar changes its color to dark brown. Switch off flame. Cool for 3 minutes add 15 ml water and mix well. Add 15 ml once more and mix well. If need repeat adding water. It has the consistency of sugary syrup. Cool well to room temperature.
If you make more can keep in bottles and use whenever necessary.This syrup can also use for coloring grape wine give a gold brown color
How to make cake
In a big sheet of paper /plastic paper or in a 12 inch diameter plates
Take flour, sugar powder, pinch of salt, baking powder, nescafe instant coffee powder and mix well. And sieve 2, 3 times
In another bowl mix all liquids i.e. milk at room temperature, oil, vanilla essence, caramelized sugar and mix well with a big spoon,
Add one big spoon of flour mix to the liquid mix. And mix well add spoons of flour mix to the liquid one by one and mix well each time. Repeat the process till the end of flour. The flour liquid mix is very smooth at the end of mixing.
Keep ¼ of the dry fruits and nuts for toppings at last. Add ¾ of the cherry, raisins, cashew nut pieces to the batter and mix well
Take a 7 inch width cake pan/tin put 1 teaspoon oil into it and spread the oil to the inner sides of the pan with hand or teaspoon
Add 2 teaspoons of flour to the pan and coat the inner sides of the pan with flour without hand or teaspoon. Remove the excess flour by turning it.
Pour the cake mix to the prepared cake tin wait for 1 minute and decorate the top of cake mix with cashew nuts, raisin, and cherry
Preheat oven at 200C for 5 to 10 minutes and put the cake tin on a low rack, bake for 40 minutes.
After 40 minutes insert a knife in the centre of the cake, if it is sticky bake at 180C for 5 minutes.
Cool on wire rack for 15 minutes
Take outside and cool for 15 minutes
Turn the cake on a plate. The cake is ready. And is ready to serve
