Egg plant with tomato stir fry
Ingredients
Egg plant 500 kg
tomato 4
green chilly 5
onion 1
garlic 4 cloves
mustard 1 teaspoon
turmeric 1/2 teaspoon
garammasala ½ teaspoon
chilly flakes 1 and ½ teaspoon
oil 30 ml
preparation
Chop egg plant and tomato
Chop onion, green chilly, garlic separately
In a hot pan add oil, after 2minute add mustard seeds, when it splutter add onion, green chilly, garlic, and sauté, in lower flame add chilly flakes, turmeric, garam masala and sauté add salt chopped tomato, eggplant and stir well, higher the flame for 2 minutes, then lower the flame and cover and cook till tender. Don’t over cook, if it over cook, it will mashed.
Egg plant with tomato is very tasty , serves with roti, rice, bread, and can use as filling
